We had three guys in my former unit that ended up with a nickname derived from "gook": a Korean kid with the unfortunate last name of Guk, a chinese-american guy who was totally obnoxious, and a Hungarian with the last name Guczwa (officially pronounced goo-swa - but every time his name was called out in formation or whatever it was invariably pronounced gook-wah). Needless to say, they ended up with the nicknames: Guk the Gook, Gawdamn Gook, and The Gook.

It is. However, Guk jokingly called himself that, Gene wore his like a "badge of honor", and Guczwa was a lily-white caucasion from Eastern Europe. Context is important.
Here, on the other hand, "Paki" doesn't mean anything AFAIK. Americans tend to lump all Arabs, Persians, Armenians, Turks, Afghans, etc etc under the catch-all "rag head" or "towel head". Most Americans aren't even aware there's a difference.
