Actually, granite IS an igneous rock. Granite forms from molten rock through crystallization and therefore it's igneous.
You're correct, however, in stating that no granite has been found as a result of lava flow - it never will be. Lava is molten material that has been extruded onto the surface of the earth. Rhyolite forms from lava and is the extrusive equivalent of granite. Granite is emplaced and crystallizes (i.e.,cools) at depth within the earth's interior - it's also called a plutonic rock.
