I bet that's exactly it, schraf. Either Flies has an exquisitely sensitive nose, or the chef had a heavy hand; I did notice in another post that Flies says he doesn't eat much fresh fish because it smells, well, fishy...
I sometimes use a small amount of fish sauce (I'm allergic to all shellfish), but often don't because it does turn some people away.
Probably wouldn't want to offer him winter kimchi, either

Looking for Sausage Recipe
Help!
I'm trying to find a good sausage recipe to make from scratch. I want to make beef sausage.
We are trying to avoid nitrites so I don't want to use the prepackaged spices.
Any help is greatly appreicated.

That could probably be extrapolated to cows.
I'm a bit hazy about the ensuing steps, but I'd suggest putting the cow into the grinder tail-first.
